Recipe: Red Velvet Crepe

Why not make these tasty crepes for Valentine's or Pancake Day this month. Or better still...both!

Serves 6

INGREDIENTS

1 cup of flour
2 whole eggs lightly beaten
3/4 cup skimmed milk
3/4 cup water
1/2 tsp salt
2 tbsp of melted unsalted butter
1 tsp of chocolate powder
2 drops of vanilla extract
Red food colouring

METHOD

Mix the flour and chocolate powder and place the mix in a large bowl and make a well at the centre.

In another bowl combine the eggs, milk, water, food colouring and vanilla extract

Pour the wet ingredients into the well and slowly mix them together. Add the salt and melted butter and continue mixing until the batter becomes smooth. Cover and refrigerate for at least one hour.

Lightly grease a large- sized non-stick frying pan with oil spray. Place over medium heat.

Once the pan is heated, pour about 1/3 cup of batter mixture and swirl to spread out and fill the bottom of the pan.

Cook for two minutes and then flip to cook the other side for another minute or until golden brown.

Transfer to a plate and assemble the rest of the ingredients or toppings, folding in a triangle.

TOPPINGS
Strawberries cut in halves or quarters (depending on size)
Good quality chocolate topping or melted Nutella
Chocolate whipped cream Powder sugar dusting

METHOD OF ASSEMBLY
Before folding the crepe in a triangle, fill in the middle 1/3 with chocolate whipped cream and sliced strawberries. Fold the crepe into a triangle using strawberries, chocolate topping, and sugar dusting to decorate to your taste. Chocolate whipped cream can be used on the side of the crepe and you can even add your favourite ice cream. Serve and be delighted.
